A little reading to begin with
A SAMPLE FROM CHAPTER ONEChoose a manageable preparation task before taking out the knife. A few slices of a soft vegetable are enough to learn from; a large pile of different ingredients can turn practice into a rush. Read what the recipe actually needs and set aside room for the uncut food and finished pieces. This gives the cutting area a simple sequence instead of requiring you to reach across clutter. Begin before heating a pan so another cooking demand does not compete with learning the movement.
Use a proper clean cutting board on a stable work surface. It should not slide or rock; a suitable nonslip mat or damp towel underneath can help where compatible with the board and surface. Arrange the task at a comfortable height with adequate light. Wash hands appropriately and dry your hands and the handle before gripping the knife. Keep the work area clear of distractions and avoid placing the blade near an edge. Board stability is something to check with the knife put down, not discover halfway through a cut.
Prepare produce using appropriate food-handling guidance and keep raw animal foods outside this beginner exercise. Separate cleaning needs from cutting skill: an attractive slice is not evidence of hygienic handling. Check the board again after moving it or changing the arrangement. If the setup feels awkward, change the task rather than forcing yourself to work at an uncomfortable angle. The goal is not an elaborate professional workstation, but a small ordinary space in which the board, food and hands can remain under your control.
